 I recently realized how little I understood about empanadas. One bite of an Argentine empanada, and you’re hooked. 

But did you know you can tell what’s inside just by looking at the repulgue (the folding of the crust)? 

Each filling—whether it’s beef, chicken, or cheese—has its own unique repulgue, a little secret code passed down through generations. The most classic folds you’ll find are the half-moon crimp for beef, the braided edge for chicken, and a pinched triangle for cheese.

I had the amazing chance to travel around Argentina this year, and one of the highlights was going to the gorgeous Jujuy wine area. 🌵⛰️🍷

We visited Fernando DuPont- The winery and vineyards are located in Maimará, province of Jujuy. This winery is  at 2,500 meters above sea level (8,200f). 

It is the first winemaking venture in the Quebrada de Humahuaca, a landscape declared Natural and Cultural Heritage of Humanity by UNESCO in 2003.

🌵 Bordering southern Bolivia and the edge of Chile’s Atacama region.

⛰️	Altitude: 1,720 to 3,329 metres about sea level

🍷 There’s 23 wineries / vineyards with around 26 hectares 

📈 In Jujuy you can find the second highest vineyard in South America at 3,329 meters (10,922 feet) 

🍇 Malbec is king, but you definitely need to try Cabernet Franc!
